Otto Spijkers is docent aan de Faculteit Governance and Global Affairs van Leiden University College. Daarnaast is hij universitair docent aan het Amsterdam University College (AUC), waar hij het vak Internationaal Recht geeft. Voordat hij bij het LUC en AUC kwam, was Otto hoogleraar Internationaal Recht aan het China Institute of Boundary and Ocean Studies van Wuhan University en het Research Institute of Environmental Law van deze universiteit. Hij is nog steeds hoofdredacteur van het Chinese Journal of Environmental Law. Voordat hij bij de Wuhan Universiteit kwam, werkte hij bij het Utrecht Centre for Water, Oceans and Sustainability Law en het Nederlands Instituut voor Zeerecht van de Universiteit Utrecht. Hij schreef zijn proefschrift, getiteld The United Nations, the Evolution of Global Values and International Law, aan het Grotius Centre for International Legal Studies van de Universiteit Leiden.
