CML researcher Sterre Ter Haar has made the front page of The Washington Post with her research into declining nutritional values. ‘We hope this is a piece of the puzzle that says: perhaps we should take this seriously and find out what is happening to our food.’
In the article in The Washington Post, researcher Sterre Ter Haar explains her research into how rising CO₂ concentrations are affecting the nutritional value of crops. According to her, the nutrient density of many staple foods has been declining for decades. ‘As a scientist, it’s interesting, but as a human being, you don’t want to see such a shift,’ says Ter Haar. She warns that even small declines can have major health implications for large groups of people.
