How is the soil microbiome related to the nutritional value of the crop onion?

Are all onions the same? And if not, where do the differences lie? The most important questions are: what does life in the soil do to the composition of the vegetable? Can we perhaps grow an onion that contains even more nutrients?

We are discovering more and more that bacteria and fungi in the soil are very important for the onion and investigating what does that soil life do for the nutrients in the vegetables.

Flevoland is one of the provinces in the Netherlands where the most onions are grown. It is the most consumed vegetable worldwide, which makes it particularly interesting to research its nutrients. The idea is not to produce more, but to grow onions with a higher nutritional value.
