Dr. Doris M. Jacobs, Lead Scientist at Unilever R&D, Wageningen, The Netherlands.
Doris obtained her PhD in Physical Chemistry at the RWTH Aachen, Germany, in 1996. In several postdoctoral stays at the Pacific Northwest National Laboratory, Richland, USA, the Vrije Universiteit Brussel, Belgium, and the University of Frankfurt, Germany, she specialized in the analysis of structure and dynamics of proteins using NMR spectroscopy. She was working as a lead scientist at a biotech start-up with focus on NMR-based drug discovery, before she joined the Nestlé Research Center, Lausanne, Switzerland, in 2003. There she established NMR-based Metabolomics. Since 2006 she is leading the Data Science & Metabolomics capability at Unilever R&D, Wageningen, The Netherlands, where she initially applied metabolomics in nutrition research. Her current research activities are concentrated around developing digital approaches to food flavour and sensory analysis.
